Diversity on the Menu: Culinary challenges for 11 countries at World Para Nordics

PRINCE GEORGE – Food is fuel, and the catering service for the Para Nordics is ready to fuel the volunteers and athletes.

The smells were wafting across the ski hills…the food was ready to be served for the 216 hungry mouths on Monday before the Para Biathlon and Para World Cup finals opening ceremonies day. But that is the smallest group of people they’ll see for the two weeks.

“ It’s changing. Each day, we get a whole different number. So by a couple of days from now, we’ll be doing 300 and some per day.”

With 11 countries making their way to Caledonia Nordic Ski Club, the catering has to prepare different dishes to accommodate dietary needs on top of cooking dishes that work with different cultural cuisines.

For workers like Fresen, it’s more than just providing food for the athletes; it’s the opportunity to meet people worldwide.

“ We love meeting new people, so it’s nice to see a big dynamic. Like a lot of volunteers. We’ve been here a few times now, so some of us know, or we know some of them.”

The dining hall can feed up to 200 people in one sitting. Over the next 13 days, more athletes are scheduled to arrive at Caladona Nordic Ski Club.
