To Your Health: Fall Veggies

PRINCE GEORGE — The summer may have been long but temperatures are finally falling and what shows up on your plate might begin to change. Pumpkins, Squash, Carrots, and Beets are just some of the fresh veggies that are coming into season.

“So things like root vegetables do really well in colder weather. Some of the greens like kale and that sort of thing, which grow above the ground, tend to do quite well and are quite hearty with colder climates. Root vegetables are really part and parcel to fall. Like when you think of comfort foods like soups and stews and mashes and those kinds of things, I mean, root vegetables come to mind,” says Sherry Ogasawara, Registered Dietitian.

Many of those root vegetables are jam-packed with tons of vitamins and minerals needed for a healthy balanced diet. The more colourful the better.

“ So you’ll see a lot of dark rich colors like oranges and yellows and reds like beets. When you see that color that really depicts that, there’s a lot of nutrition. So vitamins A, vitamin C, a lot of other vitamins and minerals. So those sorts of things, fiber as well tends to be found in vegetables, particularly root vegetables and some fibers that not only help with keeping cholesterol in check like soluble fibers, but also something that also has some impact on gut health,” said Ogasawara.

Supporting local growers will get you the freshest produce but Ogasawara says there is another benefit to buying local.

“So it’s all of these great nutritional benefits as well as good for you, good for the planet, that sort of thing. But again, I don’t think you can beat the flavor. The carrots that are grown locally are absolutely amazing. You don’t have to do anything with them. They come out of the ground and they taste, I call it Nature’s Candy,” said Ogasawara.
