Birch sap tapping season

PRINCE GEORGE – As the weather begins to warm up and winter slowly comes to an end, birch sap harvesters are heading into the forest with buckets in hand to collect tree sap that’s only available for a few short weeks.

It may be a little early in the season but Jennifer Cote owner of Moose, Mushrooms, and Mud is out testing for birch tree water.

According to Cote birch sap is collected only at the break of winter and spring when the sap moves intensively up the tree. Finding the correct time of year and the tree’s sweet spot can take some skill.

Cote drills a hole into the birch tree and leading the sap into a container, some of the sap water she collects is boiled down to birch syrup. It takes about 100 litres of birch water to make one litre of syrup.

Cote recommends not consuming the sap if it is discolored. You can discard the sap and pull the tap and heal the wound with a wooden plug.
