CNC Instructor Mandy Newcomb recognized by prestigious global organization

PRINCE GEORGE – The College of New Caledonia’s (CNC) Chef Instructor Mandy Newcomb received recognition from the global organization Les Dames d’Escoffier for her exceptional work in the culinary field. This global organization is focused on advancing women in the food, beverage, and hospitality industry, and Newcomb said she is humbled and honoured to be a part of the group, which has 2600 women worldwide.

“We really want to inspire, advance and support females in industry. It’s basically a sisterhood of all of us women,” Newcomb said.

Having been CNC’s Chef Instructor for 12 years, she’s made a profound impact on the students that have worked in her kitchen. Sophia Franks is one of her students this year, and while she isn’t from Prince George she said Newcomb has created such a positive learning environment that it’s like a home away from home.

“She almost sets off a parental role. She’s there to make sure that we’re doing things safely and carefully, and I know we all have a huge amount of respect for her,” Franks said.

“She really pushes us to be our best and we’ve all grown so much together. We keep talking about where we started off and it’s just amazing how far we’ve come so far,” she added.

For Newcomb, while being recognized by Les Dames d’Escoffier is an incredible feeling, she says teaching and cooking is its own reward.

“It really warms my heart when I see the students, especially the ones who are perhaps struggling at the beginning and in level one in August, and then they come around and the tables turn and then they really can shine when they find something that they’re good at,” she said.

“I like entertaining our guests here at the college as well, not just personally, and I think that’s what keeps me coming back every day. I love teaching other people, but I love being creative for our guests and the students.”

Her passion and love for cooking are definitely felt by her students, and Newcomb’s dedication to her craft is what Les Dames d’Escoffier is all about.

“She’s amazing. She’s so supportive. And yeah, she can be hard on us a lot, but that’s just the push we need to get through and that’s what’s going to make us succeed in life. There’s a lot of mental and physical draining that goes into it. It takes a certain type of person to do that, not everyone can, and having a strong female doing it is just so inspiring,” Franks said.

While CNC’s restaurant The Kodiak closed for the season, it will soon open for dinner service again in march, where you will be able to taste all the wonderful work Newcomb and her students are doing.
